Not to toot my own horn or anything but Oh My God this came out delicious!!! and have I mentioned simple.
During my recent adventures in meal planning and prep’ing. I started off by grilling up some organic chicken breasts very simply with salt, pepper and in a little coconut oil.
3 small grilled organic chicken breasts chopped to desired size
1/2 onion diced
2 celery stalks diced
1/2 cup dried cranberries
1/2 cup pecans
1/4 cup paleo mayo
Mix it all together and enjoy! I now make it ahead of time for my weekly prep and it can last in an airtight (I prefer glass) container for 3 to 4 days. Although mine never lasts that long…
