Dessert Week: Easy Vegan Ice Creams

Ever thought about making your own ice cream?

Ever wonder just how easy it could be?

Have I mentioned lately how much I love my Vitamix?

Peach Ice Cream

My boys pretty much get dessert every night and the easiest of these to make is ice cream. Yup. You heard me right! Homemade two ingredient, 5 minute ice cream!

1 bag or blender container full of any frozen fruit of your choice

1 cup full fat coconut milk

Blend it down into creamy deliciousness!

Should you want something in more of a sorbet consistency then just leave out the coconut milk. The sorbet is great with a 1.2 cup of vodka or another liquor for n extra special adult treat.

Our favorites are peach, pineapple, banana and cherry. I’ve noticed with raspberries the ice cream comes out a little too tart for my taste. And I have been known to make a hot fudge topping.

Homemade vegan hot fudge

1/2 cup cacao powder

1/4 cup non dairy milk

1/4 cup maple syrup

Combine the ingredients and stir over a low heat until a rich chocolate sauce appears. You can make it thinner or thicker by adjusting the amount of milk and sweeter or not by adjusting the amount of maple syrup. But do not omit the sweetener all together as the cacao powder is quite bitter without it.

Add 2 cups of non dairy milk and you’ve got hot chocolate!
