Dessert Week: Berry Tart with Cashew Banana Cream

Who doesn’t love a completely indulgent dessert? Who doesn’t love a completely indulgent dessert without all the guilt?!? I LOVE dessert but I do not love added sugar, corn syrups and artificial ingredients. I also don’t love spending a lot of time baking for 30 seconds of gratification.  I prefer my desserts to put out for me, with more time spent enjoying them than making them.

This berry tart is full of vitamins and antioxidants with a cream topping that will not go straight to your thighs and it’s red, white and blue 4th of July appropriate!


1 cup nuts – 1/2 cup pecans and a 1/2 cup walnuts

1/2 cup dried dates

Pinch of sea salt

2 cups fresh mixed berries

1/2 cup raw cashews

1 small banana


Combine 1 cup nuts, (1/2 cup walnuts and 1/2 cup pecans), 1/2 cup dried dates and a pinch of sea salt in either your blender or food processor until the mix gets a crumbly texture. It will rise up onto the sides, push it down and continue processing until yielding the right consistency.

In my dessert cups I spooned 2 teaspoons of the mix into each and pressed it down forming the crust.


Blueberries, Strawberries (diced) and raspberries, simmered over a low heat on the stovetop until warm and juicy, roughly 3-5 minutes.


1/2 cup cashews and 1 small banana. Blended until creamy in the blender.

Spoon filling onto the crusts, top with a dollop of cream and enjoy!
